1. Cheesy Jacket Potato Nachos

Ingredients:

  • 1 large jacket potato
  • 50g grated cheese
  • Handful of tortilla chips or crisps
  • 2 tbsp salsa or chopped tomatoes
  • Optional: jalapeños or spring onions

How to make:

  1. Microwave or oven-bake potato until soft.
  2. Cut open, fluff up the inside.
  3. Layer crisps on top, sprinkle cheese and salsa.
  4. Microwave 1-2 mins until cheese melts.
  5. Add jalapeños or spring onions if you want.

2. One-Pan Mediterranean Chickpea & Veggie Stir

Ingredients:

  • 1 can chickpeas (drained)
  • 1/2 red onion, sliced
  • 1/2 bell pepper, chopped
  • 1 tbsp olive oil
  • 1 tsp smoked paprika or mixed herbs
  • Salt and pepper
  • Optional: a squeeze of lemon or yogurt

How to make:

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and peppers, cook until soft (5 mins).
  3. Add chickpeas, paprika, salt & pepper. Cook for another 5 mins, stirring.
  4. Finish with lemon juice or a dollop of yogurt if you have it. Serve with rice or bread.

3. Peanut Butter & Banana Toast With A Twist

Ingredients:

  • 2 slices bread
  • Peanut butter
  • 1 banana, sliced
  • Honey or cinnamon (optional)
  • Crushed nuts or seeds (optional)

How to make:

  1. Toast bread.
  2. Spread peanut butter, top with banana slices.
  3. Drizzle honey or sprinkle cinnamon.
  4. Add nuts/seeds for crunch.

4. Veggie Fried Rice

Ingredients:

  • 1 cup cooked rice
  • 1 egg (optional)
  • 1/2 cup frozen mixed veggies
  • 1 tbsp soy sauce
  • 1 tbsp oil
  • Spring onions or garlic (optional)

How to make:

  1. Heat oil in a pan, scramble egg if using.
  2. Add veggies, cook until thawed.
  3. Stir in rice and soy sauce, cook until heated through.
  4. Garnish with spring onions or garlic if you like.

5. Simple Tomato & Mozzarella Pasta

Ingredients:

  • 75g pasta
  • 1/2 can chopped tomatoes
  • 50g mozzarella or any cheese
  • 1 garlic clove (optional)
  • Olive oil, salt & pepper

How to make:

  1. Cook pasta as per instructions.
  2. Heat tomatoes and garlic in a pan.
  3. Drain pasta, mix with tomato sauce.
  4. Tear mozzarella on top, let it melt slightly.
